Pumpkin Pancakes thanks to Parents Magazine

So last night after the gross of laundry I did, the few monogram projects a pair of gingham shorts and a sad dinner of hot dogs I sat on the couch and flipped through my Parents magazine. I came across this section on getting kids to eat more veggies and I have a VERY picky eater... but he does eat pancakes and I saw the pumpkin pancake recipe.
I will say these were a success. I made mini pancakes and Porter tore up 4 in no time flat with a banana.

Here is the recipe
1 c a/p flour
1 tbls sugar
1 tsp baking powder
1/2 tsp baking soda
1 tbls butter (melted)
1 egg (lightly beaten)
1 c buttermilk
1/3 c canned pumpkin

Mix the dry together and the wet together. Then whisk together.












Now I am going to put them in the freezer and will have pancakes for the next month or so.
Thaw just by putting them in the microwave for 30-50 sec depending how many you are thawing.

I am so glad this turned out well and I wish I had taken pics of the kids eating them!

  2. I am so glad you liked them and your little girl did too... They have been stocked in my freezer non-stop until the tornado's hit and I lost power for a week.... Still working on restocking the freezer, but they freeze and reheat beautifully!
