Fried Fish Sandwiches....

So this is definitely not the healthiest post I will make. Tripp and I love a good fried fish sammy and we worked for a while to find a good recipe and this is a winner!

For the batter take
2c flour
1 tbls cumin
salt and pepper
1 tsp cayenne pepper
1/2 bottle beer

mix together until the batter has a thin pancake batter consistency. If it is too thin add more flour, too thick add more beer

Then dip the fish (I used tilapia) in the batter and drop it in 350 degree oil and fry until golden. About 2 min on each side. Then let drain on a cooling rack that is sitting on a cookie sheet with a paper towel on it.

I use big hoagie sandwich rolls and layer it with a broccoli slaw and a remoulade sauce.
For the slaw
1 bag of broccoli slaw mix
1 tbls apple cider vinegar
1/4 c of mayo
1 tbls sugar

Whisk together the vinegar, mayo and sugar. Then mix with the slaw

Place the slaw on the roll and top with the fried fish filet. We used a bought boars head remoulade dressing to add a little more spice.
