Grown Up Grilled Cheese

Now I think it is a total trend right now to experiment with grilled cheese. I recently saw a grilled cheese festival with all these different people and different grilled cheese. Now this is a sandwich I have been making for a few years, but is soooo good and a great comfort food go to. In the winter I pair it with an apple sausage chicken noodle soup, but on the particular night it was just the sandwich with a side of fruit.

You need
Fresh Mozz
Fresh sourdough or thinly sliced deli bread
Chicken breast (optional)
Pesto


Start by slicing your mozzarella, not too thin though, this is your glue. Then prepare your chicken breast. Salt and pepper it and trim any tough parts. Also you can pound it out a little if you want.
























Start by cooking the chicken in the skillet until done... usually 7 -10 min.














Lay out your slices of bread.... This is for the 4 people in my family.














Then Spread the pesto on both slices of bread. Now I could go all into pesto (to make it or buy it). If it is summer and my sad little herb garden has basil and parsley (all I grow almost entirely for pesto) then I will make it, but seeing as my garden is not ready and in all honestly buying premade pesto is way cheaper if you don't already have the herbs I used a jar pesto. And I will say it is pretty good.













Then here we go.... Put the sandwich together and if you opted in with the chicken (tripp says it isn't a meal without meat) then slice it so that it will be easier to eat.

Then I throw them on my trusty George Forman, but if you have a panini press throw it on there or a grill pan with a skillet weighted down on top.


























When the bread is toasty and the cheese is goooey you are done. Slice it and enjoy!
