Feta Stuffed Chicken with a Greek Pasta salad

So here is another food post... Simple simple simple! But a family favorite.

One of the best things about this meal is you can make it while the kids are napping or even the night before after dinner before bed to be ready when you get home from work. It is also easy to add more for lots of people or just enough for 1.

Feta Stuffed ckn
For 4
6oz feta cheese crumbled
1 tbls thyme (dried)
4 ckn breasts

First take the breast and on the fat side cut a small slit with your parring knife. Then slide the knife inside the breast to make a pocket without making the initial opening any larger. Stuff 1/4 of the cheese in each breast






















Then you can either let this sit in the fridge until you are ready to cook. Let the ckn come to room temp before you put it in a hot skillet.

Season with salt, pepper and the thyme.

Then Put the ckn in the skillet at Med-high heat with some olive oil. You want to get a pretty brown color. Depending on the size of your ckn will depend how long you need to cook them. Mine we HUGE so it took about 7min on each side. Turn down the heat after you get the pretty color and I covered mine to help the insides cook, but AFTER you got the desired color, or else it will steam your meat and you will miss that extra flavor.
























And we are ready to eat!
I served this with a bowtie greek salad which was a easy throw together of bowtie pasta cooked slightly less than done, some roma tomatos chopped and some feta cheese ( I used the flavored tomato and basil). Then tossed it all together with some italian or greek salad dressing with a little dried basil. (you can used chopped fresh, but my basil hasn't come in yet for the season).

Let sit in the fridge for at least an hour (again another make during nap or even better the night before)























I had some hummus on the table for the carrots and then some fresh apples and strawberries to round it out.....
