I will say these were a success. I made mini pancakes and Porter tore up 4 in no time flat with a banana.
Here is the recipe
1 c a/p flour
1 tbls sugar
1 tsp baking powder
1/2 tsp baking soda
1 tbls butter (melted)
1 egg (lightly beaten)
1 c buttermilk
1/3 c canned pumpkin
Mix the dry together and the wet together. Then whisk together.

Now I am going to put them in the freezer and will have pancakes for the next month or so.
Thaw just by putting them in the microwave for 30-50 sec depending how many you are thawing.
I am so glad this turned out well and I wish I had taken pics of the kids eating them!
I just made these this morning for my little one who loves pancakes! Mmmm they were good!

I am so glad you liked them and your little girl did too... They have been stocked in my freezer non-stop until the tornado's hit and I lost power for a week.... Still working on restocking the freezer, but they freeze and reheat beautifully!
